Hey Ya'll!
Today's blog post is going to be a delicious new recipe I tried last night. Taco Stuffed Shells! Yum!
Things you will need:
1 box Large Pasta Shells
Ground Beef
1 Bag Mexican Blend Cheese
1 Tomato
1 can of Olives
Green Onions
Cilantro
1 pouch Old El Paso's Roasted Tomato Cooking Sauce
Lettuce and Sour Cream to Top
If you will notice I did not put amounts on a few things because that will depend on how much you want to make. I hardly ever measure anything, I just add to taste.
First: Preheat your oven to 350 degrees
Then, brown your ground beef and after drain all the grease.
While that is set aside, go ahead and start cooking your large pasta shells (we used one box for a whole pan and extra)
Next, drain your shells and run under cold water
After that, in a baking sheet (we used disposable for easy clean up) line up the shells and get ready to prepare the filling.
Add your ground beef back to the pan you browned it in and put on medium heat. Then add your pouch of roasted tomato cooking sauce and a little of the mexican blend cheese and stir until it thickens and chop half of your tomato and add as well.
Then, stuff a little bit of your ground beef mixture in each shell.
After you have all of them stuffed, top with remaining cheese, tomato, olives, cliantro, and green onions.
Bake at 350 for about 20-25 minutes.
Top with lettuce and sour cream.
We served ours with a small salad and italian herb bread.
It wasn't necessarily a quick and easy meal, but it was pretty darn good. You can basically add or top with anything you could possibly want. Perfect for date night, family dinner, or even a meal by yourself.
